据<中国食品营养大典>载:鸭肉富含蛋白质,约为16—25%,还富含铜,铁,锌等微量元素,而脂肪酸主要是不饱和脂肪酸和低碳饱和脂肪酸,因此熔点低,容易被人体消化吸收.高蛋白,低脂肪,是名符其实的健康美食,老少皆宜.
